We have all heard it before: “Breakfast is the most important meal of the day!” And this famous saying is so true. I’ll get to the importance of breakfast in a minute. But first, I am so excited to share with you my favorite, and what will be your new favorite, healthy egg sandwich recipe! This sandwich checks a healthy box with each ingredient, and it is so delicious. Additionally, it is dairy-free which has helped me immensely in my journey to consume less dairy. Goodbye bacon, egg, and cheese.
So why is breakfast so important? Breakfast literally means breaking your fast. You sleep through the night for (hopefully) 7 or 8 hours. During this time, your body works hard to break down what you ate the day before so your stomach can be ready for a new day. When you eat breakfast, it is important to fill your empty stomach with something healthy! If you eat something high in refined sugar or carbs, you are setting your body up to crave this for the rest of the day. You are also setting yourself up to feel sluggish.
Instead, you should eat something high in protein, healthy fats, and whole grains. Lucky for you, this healthy egg sandwich has each of these! Keep reading below for your new favorite healthy egg sandwich recipe.
Ingredients You Will Need:
- One slice multigrain bread of choice
- 1/2 an avocado, pit removed
- 1 egg (add a second for extra protein + substance)
- 1 tbsp olive oil
- 1/2 tsp lemon juice/fresh squeeze
- salt + pepper to taste
Recipe Instructions:
First, take the slice of multigrain bread and put it in the toaster oven. You will want a golden toast!
While the bread is toasting, slice the inside of the avocado length-wise with a butter knife, being careful not to slice through it all the way. Once the bread is done toasting, you can spread all of the avocado slices on it. Then, add salt and pepper to taste and the 1/2 teaspoon of lemon juice, or a little fresh lemon squeeze!
Once your avocado toast base of the breakfast sandwich is ready, it is time to cook the egg. I love a little runny yoke when cooked over easy, but feel free to cook the egg your way of choice. Drizzle the olive oil to ensure the egg won’t stick, and then get cooking! After the egg is cooked, add on top of the avocado toast. Add salt and pepper over the egg to taste.
