I absolutely love tacos! They always seem to hit the spot. Plus, they are quick to make and can be super healthy if made with the right ingredients. In this case, we are going with vegan ingredients. I have been trying to consume less meat (see here for The Amazing Benefits of Eating Less Meat) so this is a perfect go-to recipe. The best part about this recipe – it is nearly impossible to mess up! You can put as much or as little of each ingredient as you would like, but measurements are also given for those who would prefer to use them. This is the most simple & delicious vegan taco recipe.
This recipe is one of my new favorites because it is so versatile. It can be served as a quick weeknight meal or multiplied to create a vegan taco bar for entertaining. Regardless, you will feel warm inside after taking your first bite. Keep reading for ingredients and step-by-step instructions on making these amazing vegan tacos.

- This recipe can make 2-3 tacos, depending on how thick you want them to be. It can be easily doubled for two or multiplied even more for a crowd!
Ingredients for Tacos:
- 2-3 soft taco tortillas (see here for a guide to determine whether they are vegan)
- 1/2 cup black beans
- 1 bell pepper – choose your color!
- 1/4 cup chopped onion
- 1/2 cup cooked brown rice (optional for a more burrito-style taco)
- 2 tbsp olive oil
- guacamole from 1 avocado
- adobo and chili powder to taste
Ingredients for Guacamole:
- 1 ripe avocado (should be slightly soft)
- 1/4 of a lemon
- 1 tbsp onion chopped small
- salt + pepper to taste
Directions:
To start, heat 2 tbsp olive oil in a frying pan over medium heat. Once heated, add the chopped onion and mix in with the olive oil. Saute for about 5 minutes, stirring occasionally. or until onion is almost translucent. While the onion is cooking, remove the center of your bell pepper and then slice thinly. Mix the pepper slices with the onions in the pan, continuing on medium heat. Sprinkle with a thin coating of adobo and chili powder and mix for an even covering. Then, cover the pan to allow the peppers to cook and soften for about 5 minutes, stirring occasionally.
While your onions and peppers are cooking, it is time to make your guacamole! I always wait until towards the end to make my guacamole so it is nice and fresh. Slice the avocado in half, remove the pit, and carve out the inside. Place into a bowl and mash it up! Then, squeeze 1/4 of a lemon using a lemon squeezer to avoid seeds. Mix in the onion, salt, and pepper.
Now that all of your vegan taco recipe ingredients are ready, heat up the tortillas and get ready to add toppings. I usually like to put rice first, then protein, then the rest. But the fun part is that there is no right or wrong way to make a taco! Top it as you like and enjoy your healthy meal.
